Over the past several years, Burger King has struggled to maintain its share of the fast food marketplace. In addition to increased pressure from major competitors like McDonalds and Wendy's, Burger King has been forced to contend with an increasingly crowded QSR marketplace and a consumer base that wants more options in fast food than ever before.

To become more profitable and competitive, Burger King launched a refranchising initiative in 2013--a strategy that now appears to be paying off for the brand. Recently, Entrepreneur reported that Burger King's Q3 2013 net income dramatically increased to $68.2 million, from just $6.6 million during the same period in 2012.
Burger King's decision to refranchise 519 of its company-owned locations played an important role in helping the brand achieve a tenfold increase in net income. Currently, nearly 99 percent of Burger King's stores are owned by independent franchisees. This has helped the Burger King franchise reduce overhead costs and become more profitable, both in the U.S. and around the world.
According to Burger King CEO Daniel Schwartz, "We (Burger King) grew comparable sales across all three international regions and opened 133 net new restaurants globally."
For the franchise entrepreneur, the opportunity to operate a restaurant location for an established brand like Burger King is highly attractive. By expanding its franchise program, Burger King created a win-win scenario not only for the brand, but also for scores of franchising entrepreneurs around the world.
Burger King cited the introduction of new products like Satisfries, a reduced fat menu option, as another factor in its Q3 success. "We believe that new products like this, combined with our focus on improving operations will enhance the guest experience and drive increased restaurant profitability," added Schwartz.

掌握授權竅門 中小企致勝關鍵

時代改變了,21世紀商業模式,由單純銷售產品,轉為銷售品牌。一個品牌簡單概括了品牌的核心價值,它可以將產品或服務,鶴立雞群,而授權則是推廣或取得品牌商機的捷徑。有鑑於此,香港貿發局早前在香港眼鏡展期間舉辦研討會,邀請業界分享生活時尚品牌授權新趨勢,及創造成功授權產品的竅門。 

全球授權產品潛力大 單中國37億美元品牌顧問鎮通國際有限公司行政總裁繆家濤表示,現在不少時尚或高級品牌,都有推出眼鏡產品系列,例如COGU、Giorgio Ferri等,有的品牌更利用眼鏡贊助拍攝電影,因而可讓更多爭取此授權的投資者認識。據統計顯示,全球授權產品零售額約1,497億美元,單是中國內地便有37億美元,而港、澳也有2.6億美元。市場規模之大,不容忽視。繆家濤指出,品牌是聯想起某公司或產品的視覺、感覺、理性及文化形象,投資者選擇授權產品時,必須考慮其品質是否可靠、是否容易取得授權,以及品牌為消費者帶來的心理滿足。要知道,雖然授權產品生產成本較高,而且投資者也需支付專利權使用費,但產品零售價或可提升一倍,回報相對一般產品可觀。

回報高 消費群忠誠度亦高繆家濤續說,授權經營的好處是,可通過品牌的聲譽及歷史背景,讓消費者更容易接受產品,事實上,既有忠誠消費群是其優勢之一,因而在推廣及時間成本上,都較自立品牌為低。另外,投資者可從授權商迅速學會營運及管理技巧,在一般情況下,也不會無故被終止使用權利。提到當前授權業趨勢,繆指有幾點必須掌握。例如,愈來愈多零售商直接與授權商(licensors)簽約,發展或獨家分銷授權產品(如:K-Mart x SofiaVergara;H&M x Versace),而不是從被授權商(licensees)那裡購入產品。另外,不少品牌之間喜歡作跨域合作(如Pineapple Eyewear x Swarovski),為的希望擴闊客群及創造新的消費體驗。

透過多元化媒體晉身國際發展趨勢顯示,不少時尚品牌多會在電視節目或體育盛事中亮相,通過電視、互聯網等資訊科技渠道迅速傳播,使授權產品變得更為國際化,消費者可在不同國家的大型零售店中,購得相同的產品。再者,愈來愈多品牌分散投資至不同副線上,例如寵物食糧、家居產品、園藝工具,甚至推出智能電話及手提電腦等(如槍械生產商Remington Arms推出服飾等)。其他發展趨向,包括增加利用線上及手機遊戲、社交網絡等渠道,進行滲透推廣(如Angry Bird、Pucca);為了全球銷售,授權商的市場策略、定位乃至產品組合,越趨簡化與統一。更明顯的是,現在授權商、品牌代理、被授權者及零售商之間的合作,比過往更加緊密,一方面是加強市務推廣協作,同時也令陳列、庫存控制環節上,更加暢順。

選擇授權有標準繆家濤提醒中小企,選擇授權品牌有一定的標準,例如,消費者對品牌的認知度、品牌的目標客群是誰、品牌的形象及平均壽命、品牌形象能否配合自己的產品、授權商或代理有否正式授權能力(或有否向其他人授權同類產品)、授權產品有否在經營地區註冊商標、授權商或代理將提供甚麼支援或協助等。那麼,授權商又如何挑選被授權者?繆家濤提出幾項準則,譬如說,過去經營授權產品的經驗、生產設備準備情況、生產及分銷能力、銷售預測及市務規劃、長遠發展能力、財務負擔能力和被授權人的名望等。

授權商授權者共贏 成功關鍵亞洲動漫文化創意產業協會秘書長趙卓敏分析指,如何令授權商與被授權者達至雙贏,一直是授權業務的成敗關鍵。她舉「3國小豬」漫畫為例,其成功是創作公司除為客戶創作不同角色,以提升其品牌形象外,同時也透過開發各類型智能手機應用程式,協助商戶宣傳及推廣。她續說,被授權者(如廠家)只需配合授權商要求專注生產即可,出廠後的工作由對方負責推動。例如,在中港台開發手機應用程式吸納目標客群;除利用社交網絡外,也通過漫畫及月刊推廣授權產品;另外是與電台及著名手機商合作,而參加貿發局的授權展也相當重要,可直接面對客群。挑選被授權商方面,該授權商關注生產認證及產品質量,原因直接影響其品牌商譽。

對有志突圍的企業或想創業當老闆的人來說,特許經營或許是其中一個捷徑,不僅可通過知名品牌實現夢想,而且投資風險相對較低,但當中仍有不少竅門需要注意。有見及此,香港貿發局誠邀專家及業者,分享特許經營在港發展模式及機遇。

香港專利授權及特許經營協會副會長關紫悠表示,特許經營是一協議,賦予一個人或一組人(加盟商),使用特許經營商的商標或商品名稱,推廣產品或服務,留意是當中可能包括特許經營系統的使用。「例如有些便利店可售賣魚蛋,有些則不能,這主要看特許經營商認為有否此商機。」

風險低 成功率高

她指出,做特許經營好處是,對首次創業新手來說風險較低;另外,對方會傳授營銷竅訣,因而毋需由零開始,大大縮短學習時間,經營期間也隨時獲得專業指導。統計證明,這是其中較易開拓新業務的方法,成功率高達90%。

不過,對於加盟商而言,特許經營制度有一套特定要求。例如,除了首次加盟費外,還有周期性的特許經營權使用費及廣告費,並需嚴格按照標準運作流程營運。「舉例說,開店範圍有一定標準、加盟商不能完全獨立、作出改變前需知會及需時申請等」。

評估特許經營可行性 定策略細則

她續稱,有時特許經營商的領導不力,未必如想像中強勢,加上雙方合作關係也有期限,而加盟商也必須遵循協議書上的義務,故此,加盟商成功機會與特許經營店高度掛勾。

那麼,究竟自己是否適合投資特許經營?關紫悠建議投資者先行回答以下幾個問題,以作評估:你是否喜歡在團隊中作戰?你是否願意分享收入?你是否急著建立自己的生意?你是否樂意遵循指引,並對外來意見持開放態度?若以上答案都是正面,便可考慮投資,否則便要三思而後行。

投資特許經營第一步,必須由擬訂計劃書開始。關紫悠建議投資者自己草擬一份(不要全盤接收特許經營商的計劃書),定下新業務的策略方向、往來銀行的要求、潛在投資回報率、員工工作指引、特許經營商的要求,以及與特許經營商的談判基準等。

兒童教育:參考國外模式

來自美國教育品牌的數猴皇醒目兒童教育中心或可作為其一例子。其市場策劃主任葉漢明表示,市場趨勢顯示,香港教育正步向外國模式,凸顯活動教學,以學生為本,強調提升學習動機,不再填鴨式教授,要求融會貫通,活學活用。

在此大環境下,家長普遍將子女「起跑線」推前至2歲,即為他們按排各種活動(取向:活動、腦動、社交),希望及早連接學校課程。事實上,現市場訴求傾向培育小孩靈活變通、懂得與人相處,以及多角度思考。

葉漢明指,他們與別不同之處,是香港唯一教授Vedic Math,並結合遊戲及BBL腦基礎教學法。相比一般便利店,他們的加盟成本較低(包括培訓、教材及玩具等),約8萬元,而合作年期也較長,一般為5年。此外,加盟者可自由選擇全職投身或兼職,靈活性較高。

餐飲連鎖業:7P品牌管理

La Kaffa為近年冒起的餐飲連鎖品牌,總公司於2004年成立,為台灣上市公司;該品牌正部署今明兩年,全力發展中國及香港市場,而第三代門面也正式在港推出。La Kaffa大中華區高級市務經理李家聲表示,成功與否需要多方面策劃配合才行,他們強調7P品牌管理模式:
Product (產品)產品要統一,標準化營運;品質控制是品牌的重點,食品製作需容易上手。
Price (價格)推高收入的竅門不是賺到盡,而是人流+現金流。
Place (地方)店面位置人流固然重要,但環境舒適更能留客。
Promotion
(推廣)
推廣不一定等於減價;不同客群各有需求。
Procedure
(流程)
不同店有流程上的微調,重要是專業的表現,緊貼授權商步伐是關鍵。
People (人事)強調管理團隊精神,而管理人員的培訓可令發展更為暢順。
Profit (利潤)控制開源的方式,走在潮流前端,謹慎盤算風險承擔,有管理品質就有利潤。

李家聲指出,香港租金昂貴,必須用盡每一個時段,故此,他們強調「任何時間,也可以是好開始」,並特別推出兩大「飲+食」主題,吸引客人早、午、晚也想到此消費。「今時今日,經營餐飲業不能單純依賴人手,風險大成本也高,重點是看特許經營商,有否提供強勁的設備支援(生產高質食品)。」

經營牌照 留意新例出台

提到飲食業需要申請很多牌照,而且每年都有新要求出台,特許經營商與加盟商該如何分工,李家聲表示,「一般來說,特許經營商會指導加盟商逐一申請,直至發出經營牌照為止;之後,食環署會定期巡查衛生條件,這時店主需設有衛生督導員配合。經驗說明,只要正式發出牌照後,往後的事都不用太費神。」

他補充說,這行投資回報率不俗,旗下一間加盟店投資逾百萬元,8個月即回本,但最重要是,這是否適合自己及作好準備了沒有。

Franchising: The Importance Of Great Systems Within The System

如果你打算投身特許經營,你感興趣的主要原因之一當然是其系統。購入特許經營權,就是買下一個具潛力的生意方式。
If you’re considering franchise ownership, I’m going to assume that one of the major reasons you’re interested in a franchise is because of the system. It’s what you’re buying when you buy a franchise. You’re buying a way to get a business up and running with minimal headaches.

Today’s franchise business systems need to run smoothly and efficiently. Franchisees, the people who are footing the bill for the system, expect the system to work. They also expect (because of what they were told while they were investigating the franchise) the “systems within the system” to work.

When things don’t work…things that affect revenues and profits, for instance, frustration ensues.

For example, let’s say that you’re the owner of a retail franchise. There are two things that are crucial for your business to operate, and both of them have to do with collecting revenue.

1. Credit Card Processing Machine

When customers purchase one of your products, they can pay by cash, check or credit card. These days, almost one out of every three purchases is made with a credit card, according to Visa.

If you own a retail or food-service franchise, customers expect to be able to pay by credit card. These transactions have to go through a credit card processing machine. There are 4 entities involved whenever a credit card transaction takes place. They are:
  • The merchant (you) receiving the payment
  • The merchant’s bank
  • The bank that issued the actual credit card
  • The customer

As a franchise owner, you can only control what’s in front of you. When you accept credit cards, it’s crucial for you to have high-quality credit card processing equipment and technology at your disposal. To that end, ask your franchise sales representative about the reliability of the equipment franchisees are using to do credit card transactions.

Better yet, ask several franchisees. They’re in the game every day.

When your franchise business is jammed with customers paying by credit card, your credit card processing equipment needs to work perfectly. Today’s customers are an impatient bunch. Don’t expect them to wait around very long if there’s an issue with your machine and they’re unable to pay. They’ll leave and buy what they wanted from you – elsewhere.

2. Point of Sale (POS) System

In a retail or restaurant environment, the point of sale system is the most important piece of equipment in use today. An article I found on Wikipedia sums up why POS systems are so important:


“The POS systems in various retail industries use customized hardware and software as per their requirements. Retailers may utilize weighing scales, scanners, electronic and manual cash registers, EFTPOS terminals, touch screens and any other wide variety of hardware and software available for use with POS systems.”

A lot of today’s POS systems feature things like:
  • Inventory management modules
  • Financial information-transactions
  • CRM
  • Gift card handling
  • Coupon validation
  • Customer tracking

A good deal of customization can be added to POS systems. Almost any feature imaginable can be created and added. Some POS systems even have credit card processing integrated within the system for maximum efficiency.

Franchise Systems Within the System

A couple of other “systems within the system” are needed by franchisees and franchisors to keep things running smoothly. Things such as:

Payroll

One of the most common questions posed to me by would-be franchise owners has to do with payroll:


“Joel, I’ve never managed payroll before. If I end up buying a franchise that requires a lot of employees, does the franchisor teach me how to manage it?”

It’s a great question-with a great answer. Some franchisors provide payroll software as part of the computer package you receive as a franchisee. If that’s the case, they’ll also provide in-depth training on how to use it.

Even if the franchisor doesn’t include a payroll software package, they’re readily available from vendors like Intuit, Paychex, and ADP. There’s even a payroll cardavailable now.

Internet Marketing

Internet marketing-done right is crucial to the success of both franchisors and franchisees these days. Internet marketing is a moving target. It entails a lot of things, including search engine optimization (SEO) pay-per-click advertising (PPC) and social media marketing. It’s becoming more difficult for in-house marketing personnel at franchise headquarters to keep up with everything, including all of the changes that search engines like Google and Bing seem to be fond of making as of late.

That’s why it’s important for franchisors to use Internet marketing specialists. They are tuned into each and every change that search engines make, so they can help their clients rank better for keywords used by their prospective clients, customers and franchisees.

Burger King is all set to open restaurants across India.

The popular fast food chain previously hadn’t embarked on business ventures throughout the country. However, the chain is reportedly working alongside the private equity and real estate firm Everstone Group to open restaurants throughout India very soon.
According to an article over at Zacks, Everstone will serve as the Burger King “long-term master franchisee.” This means that the company can sub-franchise the restaurants across India. Everstone will also set up the restaurants’ supply chain network and work alongside BK AsiaPac Pte. Ltd. to roll-out the new locations.

The website describes Everstone as follows:

“Established in 2006, the firm boasts superior local market knowledge and has a proven track record of venturing into the consumer products and services, food & beverage, education, healthcare, financial services and logistics industry. With its sound knowledge of Indian food habits, the franchisee expects to benefit from the collaboration with Burger King.”

“India is a market with huge potential for Burger King restaurants and we have the chance to offer the unique Burger King brand proposition to its consumers with our own local twist to the menu,” BK AsiaPac Pte. Ltd president Elias Diaz Sese explained.

The Wall Street Journal explains that Burger King’s Asia Pacific market is its smallest in the world. At present, the company only operates 1,100 locations in that territory. Comparatively, operates approximately 7,400 restaurants throughout North America. Altogether, Burger King has 13,000 restaurants serving food across the planet.

Although Everstone plans to open several Burger King locations in India, it’s currently unknown just how many restaurants will debut in the country. The company also hasn’t announced whether it intends to sell Whoppers or other beef burgers at these locations.

Unfortunately for BK, the fast food market in India is already quite crowded. In addition to McDonald’s — who has reportedly adapted their menu around Hindu and Muslim religious particies — Kentucky Fried Chicken, Taco Bell, and Pizza Hut already operate several locations throughout the country. Yum! also has plans to expand in the coming years.

According to Quartz, Domino’s Pizza claims that India is the company’s second-largest market after the United States. This is because pizza joints are the most popular organized fast food joints in the country. Over half of sales went to pizza, reportedly because it’s easier to put together a vegetarian pizza.

ADP payroll report shows dramatic increase in franchise jobs during October, with restaurant and automotive franchises leading the push for new hires.

Hiring is often seen as a bellwether of business confidence, particularly in the small business and franchising sectors. When small business owners and franchisees engage in recruiting and hiring, it's often because they expect their companies to experience growth in the coming months.

According to payroll provider ADP, franchised businesses added 25,060 jobs in October--a significant jump from the 15,040 jobs added in September and the 16,160 jobs added in August. The increase in franchise hiring during October bodes well for the franchise industry, with many experts believing that it marks a turning point in franchise optimism.

In line with recent trends, restaurant franchises added the most jobs in October at 11,520, an increase from the 9,190 jobs restaurant franchises added in September. Automotive franchises also experienced noteworthy gains in October, adding 5,150 jobs following a loss of 1,090 jobs in September. Food retailing, leisure and rental franchises reported modest hiring losses during October.

"Franchise industry payrolls showed encouraging growth during the month of October as more than 25,000 jobs were added across a variety of industries," said Ahu Yildirmaz, senior director at the ADP Research Institute. "October's gains were well above recent months and the 12-month average monthly growth rate … The franchise industry's job creation this month represents 20 percent of the total employment growth, as reported in the October ADP National Employment Report."

The takeaways from ADP's October franchise hiring report are that restaurants and other franchises appear to be experiencing sustained growth and that franchises may be catching up with the cautious optimism that has been reported in other small business sectors.
